I remember the first time I tried a huge cookie like this and it actually changed my life. I wondered how could I live 29 years without ever before trying a chunky chocolate chip cookie like this and where have they been all of my life. Don’t be like me and miss out! Try these as soon as possible.

Making It From Scratch

Cookies are one of the best recipes to start off your cooking journey with. They are quick, fun and easy to make. Also, making them is a great activity to do with kids! Who doesn’t like cookies?

Generally, almost every cookie recipe follows these easy steps for assembly. 

  1. Get your ingredients and baking sheet lined with parchment paper ready (doing this ahead of every recipe will make cooking so much easier).
  2. Cream the butter and sugar. I use a stand mixer for the sake of time. Tip: You know that you have properly creamed your butter and sugar once the mixture is smooth (not gritty), pale yellow in colour, and has noticeably increased in volume. Once creamed you will add the eggs and vanilla and mix until combined.
  3. Mix your dry ingredients into the wet mixture. You want to mix your dry ingredients into your wet ingredients until combined. Once that is complete fold in all of those delicious chocolate chunks!
  4. Form dough and place on baking sheets. These are large cookies so expect to create unusually large balls of dough to get that delicious chewy and slightly gooey inside.
  5. Chill your dough and preheat the oven. Typically you would preheat your oven before starting the recipe BUT this is no ordinary cookie recipe. For best results you want to chill your dough, this way your cookies come out large and you avoid them flattening too much.
  6. Lastly, bake them until golden. Bake your cookies until golden brown and then let them cool on the baking sheet and wire rack. Try and avoid the temptation of biting into them right away as letting them cool fully leads to the best results.

Ingredients
  

  • 275 g unsalted butter room temperature
  • 220 g brown sugar
  • 85 g white sugar
  • 140 g eggs
  • 7 g vanilla extract
  • 600 g all purpose flour
  • 4 g salt
  • 4 g baking powder
  • 185 g semi sweet chocolate chips
  • 115 g dark chocolate shavings

Instructions
 

  • Line a baking sheet with parchment paper, set aside.
  • In a large mixing bowl add the butter and sugars. Using a hand or stand mixer cream the butter and sugars together on medium-high speed until fluffy.
  • Add in the large egg, vanilla and mix until combined.
  • Add the flour, baking powder, and salt. Mix until combined.
  • Pour in the chocolate chips and gently use your hands to mix them in. This will bring the dough together. Be careful not to overwork the dough.
  • Divide the dough into 12 equal balls (approximately 135g each cookie). Gently form into cookie form. Place on the baking sheet.
  • Chill the cookie dough for at least 30 minutes in the fridge (covered). In the meantime, preheat the oven to 375℉.
  • Bake the cookies for about 25-28 minutes. Until the outside is golden brown.
  • Let the cookies cool on the baking sheet for at least 5 minutes, then place on a wire rack to continue cooling.
